Dorothy Mae Harris-Thomas

was raised by her great grandmother, Frazilla Joseph, who lived and worked as a cook on the Mississippi River banks of St. James Parish Louisiana. Dorothy Mae's cuisine training was fined tuned in the kitchen, daily preparing Creole/Southern meals for her great grandmother and 5 critical but loving brothers.

She mastered centuries of Creole and Southern Cooking disciplines involving baking, stewing, frying, steam boiling, and roasting producing home cooked meals made with love from scratch. Family and friends have enjoyed her pies/pie dough, pralines, cakes, seafood gumbo, crawfish/shrimp etouffee, fried chicken, fried seafood, crab/shrimp stew, smothered chops, turnip/collard greens, red beans/rice, homemade biscuits, shrimp mirliton, stuffed seafood bell peppers, seafood dressing, and a delicious list that goes on and on.

Dorothy Mae has now passed these Louisiana Creole Cooking traditions to her daughter Jacqueline Marie who has added her delicious Heavenly Hash Cake. It’s a mouth watering combination of full textured chocolate brownie style cake filled with pecans, covered with marshmallows and crowned with a delightful milk chocolate candy style icing.
